All our olives are pressed within 24-hours from the time they are picked. We have a rule, “what ever you pick today, you must press tonight.” That ensures our oil is always good and has a consistent quality. 4-kilos of olives are required to produce 1-kilo of olive oil. Today “First Cold Press” is required by law and it is the method that enables olive oil to maintain its natural flavor, color and nutritional value. Typically we bottle 45-60 days after we produce. After we press, our olive oil is allowed to rest for 45-60 days in order to mellow out. This resting period helps to bring out the best flavors and aromas.
